Unfortunately no, because Udemy projects are not reviewed. However you can take a course in platforms like Coursera, edX or Udacity where projects are reviewed in their Specialization tracks.

1. You cannot show an internship done in 3rd, 4th and 5th semester
2. An online/offline internship done in 6th semester may be considered subject to certain conditions like you have taken a permission from the University (examples: Some students have done internship in AICTE, FRI etc), it satisfies the minimum time criteria etc). If you have done such an internship provide the complete details.
3. A course in Coursera, Udacity etc will not be considered an internship unless it involves successful completion of a Capstone Project

I have done project under Indian Meteorological Centre Dehradun under the guidance of Scientists there and under mentorship of Dr. Sachin Sharma Sir... Will it be considered as Internship??

Nothing in particular, just inform your mentor.
However if your internship is of longer duration and it is not an online internship you need to take permission from the Head of the Department through your mentor.
